Recommended to serve with rice and a veggie of choice

Ingredients
- 125g dry red lentils, rinsed and drained
- 1 tsp coconut oil
- 2 tbsp grated ginger, grated
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp turmeric powder
- 2 heaped tsp curry powder
- ¼ tsp chili powder
- ¾ cup coconut milk
- 1 tbsp maple syrup
- 1 tbsp lemon juice
Method
- Add the lentils into a pot and cover with water.
- Bring to boil, reduce the heat and simmer for 3-4 minutes, or until the lentils are still a little crunchy.
- Drain and place aside.
- In a separate pot, heat the coconut oil.
- Fry the ginger and garlic for 3 minutes.
- Add the spices and fry for a further 2 minutes.
- Add the coconut milk and lentils and bring to boil.
- When the lentils are soft (about 2-3 minutes), add the maple syrup and lemon juice.
- Serve with rice and your vegetable of choice.
