Coconut Curried Lentils

Recommended to serve with rice and a veggie of choice

Coconut Curried Lentils

Ingredients

  • 125g dry red lentils, rinsed and drained
  • 1 tsp coconut oil
  • 2 tbsp grated ginger, grated
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp turmeric powder
  • 2 heaped tsp curry powder
  • ¼ tsp chili powder
  • ¾ cup coconut milk
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice

Method

  • Add the lentils into a pot and cover with water.
  • Bring to boil, reduce the heat and simmer for 3-4 minutes, or until the lentils are still a little crunchy.
  • Drain and place aside.
  • In a separate pot, heat the coconut oil.
  • Fry the ginger and garlic for 3 minutes.
  • Add the spices and fry for a further 2 minutes.
  • Add the coconut milk and lentils and bring to boil.
  • When the lentils are soft (about 2-3 minutes), add the maple syrup and lemon juice.
  • Serve with rice and your vegetable of choice.
