Dried Mango & Apple Muesli Bars

  • Servings: 9 medium sized squares


  • 20g chia seeds
  • 50ml soy milk (or cows milk)
  • 100g gluten free oats
  • 50g dried apple, chopped into chunks
  • 50g dried mango, chopped into chunks
  • 1 banana, mashed
  • 3 tsp maple syrup
  • 1 tsp vanilla extract


  • Preheat the oven to 170 ̊C (fan forced).
  • Line a small baking tray with baking paper (17x27cm, but I did not fill the whole one).
  • In a small bowl, add the chia seeds and soy milk and soak for 5 minutes.
  • Meanwhile, in a large bowl, combine the oats, dried apple, and dried mango.
  • Add the mashed banana, maple syrup, vanilla extract and chia mixture and stir well.
  • Transfer into the baking tray.
  • Flatten the mixture evenly to approximately 2 cm thickness.
  • Bake for approximately 25 minutes or until the mixture does not feel too soft anymore.
  • Cool in the tray before removing and cutting into approximately 5cm squares.
