Ingredients
- 20g chia seeds
- 50ml soy milk (or cows milk)
- 100g gluten free oats
- 50g dried apple, chopped into chunks
- 50g dried mango, chopped into chunks
- 1 banana, mashed
- 3 tsp maple syrup
- 1 tsp vanilla extract
Method
- Preheat the oven to 170 ̊C (fan forced).
- Line a small baking tray with baking paper (17x27cm, but I did not fill the whole one).
- In a small bowl, add the chia seeds and soy milk and soak for 5 minutes.
- Meanwhile, in a large bowl, combine the oats, dried apple, and dried mango.
- Add the mashed banana, maple syrup, vanilla extract and chia mixture and stir well.
- Transfer into the baking tray.
- Flatten the mixture evenly to approximately 2 cm thickness.
- Bake for approximately 25 minutes or until the mixture does not feel too soft anymore.
- Cool in the tray before removing and cutting into approximately 5cm squares.
