Green Bean Salad

Recommended as a starter, side, or main meal with some bread

Green Bean Salad

  • Total time: 30 minutes
  • Servings: 8 (as a side salad)


  • 700g fresh green beans, topped and tailed, cut into bite sized pieces
  • 250g cucumber, cubed
  • 400g cherry tomatoes, halved
  • 1 handful of fresh basil, chopped
  • 70g parmesan cheese chunks
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Juice of one lemon (50ml)
  • Zest of one lemon
  • ½ tsp garlic powder
  • A good pinch of salt and pepper


  • Place the beans in a steamer and steam for approximately 10 minutes, or until al dente.
  • Drain and rinse with cold water.
  • In a large bowl, add the beans together with the cucumber, cherry tomatoes, basil, and parmesan cheese.
  • In a small bowl, whisk the olive oil, red wine vinegar, lemon juice, lemon zest, garlic powder, salt, and pepper together.
  • Pour the dressing over the vegetables and mix gently.
  • Serve as a starter, side, or main meal with some bread.
