Ingredients
- 700g fresh green beans, topped and tailed, cut into bite sized pieces
- 250g cucumber, cubed
- 400g cherry tomatoes, halved
- 1 handful of fresh basil, chopped
- 70g parmesan cheese chunks
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- Juice of one lemon (50ml)
- Zest of one lemon
- ½ tsp garlic powder
- A good pinch of salt and pepper
Method
- Place the beans in a steamer and steam for approximately 10 minutes, or until al dente.
- Drain and rinse with cold water.
- In a large bowl, add the beans together with the cucumber, cherry tomatoes, basil, and parmesan cheese.
- In a small bowl, whisk the olive oil, red wine vinegar, lemon juice, lemon zest, garlic powder, salt, and pepper together.
- Pour the dressing over the vegetables and mix gently.
- Serve as a starter, side, or main meal with some bread.
