Pecan Pie Energy Balls

Ingredients
- 100 g of pecan nuts
- 130 g of pitted dates (about 16)
- ½ tsp cinnamon
- ½ tsp vanilla extract
- Pinch of nutmeg
- Pinch of ginger powder
- Pinch of salt
Method
- Preheat the oven to 175 ̊C (fan forced).
- Spread the pecans on a baking tray.
- Roast in the oven for about 10 mins and allow to cool.
- In a food processor, chop the dates into pieces.
- Add the roasted pecans and other ingredients.
- Process the whole mixture for approximately 3 minutes until well combined.
- Roll the mixture into balls.
- Enjoy or store in the refrigerator for later.
