Ingredients
- 55g dry pasta (makes 150g cooked)*
- 70g canned corn, drained*
- 40g black olive, cut in half*
- 80g cucumber, cubed*
- 100g feta cheese*
- 2 tsp olive oil**
- 2 tsp lemon juice**
- 3 tsp white vinegar**
- Pinch of salt and pepper
Method
In advance:
- Cook the pasta according to the instructions on the packet.
- Drain and rinse with cold water.
- Transfer the pasta into a bowl and add the corn, black olives, cucumber, and feta cheese.
- Combine the olive oil, lemon juice, white vinegar, salt, and pepper in a small bowl and pour over the pasta.
- Stir well and enjoy
* You can easily change the amounts to your desire
** If you prefer salads with more dressing, you might want to double the quantities
