- In advance: Roast the pecans 25 minutes in advance (steps1-4)

Ingredients
- 100 g pecans
- 130 g pitted dates (about 16)
- ½ tsp cinnamon
- ½ tsp vanilla extract
- Pinch of nutmeg
- Pinch of ginger powder
- Pinch of salt
Method:
- Preheat the oven to 175 ̊C (fan forced).
- Spread the pecans on a baking tray.
- Roast in the oven for about 10 mins, stirring them once in between
- Allow to cool.
- In a food processor, chop the dates into pieces.
- Add the roasted pecans and other ingredients.
- Process the whole mixture for approximately 3 minutes until well combined.
- Roll the mixture into balls. (if they are quite moist, you might want to squeeze them a bit to get the liquid out)
- Enjoy directly or store in the refrigerator.
