Ingredients
- 100g pumpkin puree (homemade)
- 30g cashew butter (homemade), or any other nut butter you fancy (homemade or not)
- 4 dates, pitted (35g)
- 60g gluten free oats
- 30 cashews, cut into chunks
Method
- In a food processor, add the pumpkin puree, cashew butter and dates.
- Blend until smooth.
- Transfer into a bowl.
- Fold in the oats and cashews.
- Roll into 12 balls.
- Enjoy!
- Keep in the fridge.
