Pumpkin & Cashew Energy Balls

Ingredients

  • 100g pumpkin puree (homemade)
  • 30g cashew butter (homemade), or any other nut butter you fancy (homemade or not)
  • 4 dates, pitted (35g)
  • 60g gluten free oats
  • 30 cashews, cut into chunks

Method

  • In a food processor, add the pumpkin puree, cashew butter and dates.
  • Blend until smooth.
  • Transfer into a bowl.
  • Fold in the oats and cashews.
  • Roll into 12 balls.
  • Enjoy!
  • Keep in the fridge.
