
Ingredients
- 200g tofu
- 5 tsp balsamic vinegar
- 2 tsp lime juice
- Salt and pepper
- 2 tsp olive oil
- 1 small onion, diced
- 2 tomatoes, cubed
Method
- Press the tofu in a kitchen towel to remove moisture
- Mix 3 tsp of balsamic vinegar with the lime juice and a good pinch of salt and pepper.
- Crumble the tofu with your fingers into the mixture and leave to marinate while you prepare the rest of the ingredients.
- Heat two pans and add one tsp of olive oil to each.
- In the first pan, add the scrambled tofu and fry for about 10mins, until slightly browned, stirring occasionally.
- In the other pan, add the onion and sauté for about 2-3 mins.
- Add the tomato and a good pinch of salt and pepper and cook until the tomatoes are soft and falling apart, stirring occasionally (about 7 minutes).
- Add the tofu to the tomato, add 2 tsp of balsamic vinegar and salt and pepper to taste.
- Cook for another 2-3 minutes.
- Serve on toast, as a side dish, with rice or just like that and enjoy!
