Tomato & Balsamic Vinegar Tofu Scramble

  • 200g tofu
  • 5 tsp balsamic vinegar
  • 2 tsp lime juice
  • Salt and pepper
  • 2 tsp olive oil
  • 1 small onion, diced
  • 2 tomatoes, cubed


  • Press the tofu in a kitchen towel to remove moisture
  • Mix 3 tsp of balsamic vinegar with the lime juice and a good pinch of salt and pepper.
  • Crumble the tofu with your fingers into the mixture and leave to marinate while you prepare the rest of the ingredients.
  • Heat two pans and add one tsp of olive oil to each.
  • In the first pan, add the scrambled tofu and fry for about 10mins, until slightly browned, stirring occasionally.
  • In the other pan, add the onion and sauté for about 2-3 mins.
  • Add the tomato and a good pinch of salt and pepper and cook until the tomatoes are soft and falling apart, stirring occasionally (about 7 minutes).
  • Add the tofu to the tomato, add 2 tsp of balsamic vinegar and salt and pepper to taste.
  • Cook for another 2-3 minutes.
  • Serve on toast, as a side dish, with rice or just like that and enjoy!
